From a Glasgow butcher's counter to Europe's cutting rooms

What our customers expect from us hasn't changed in seventy years: the best beef and lamb we can select.

  1. Rutherglen

Our grandfather started the business from humble beginnings in Rutherglen, Scotland.

  2. The Glasgow shops

After he died in his early fifties, Marjorie McKnight and her son Tom ran the shops for another fifteen years, serving families in southern Glasgow for more than three decades.

  3. The 1980s

Thomas Clement McKnight and his sister Helen began de-boning and packing Scottish beef in a purpose-built plant supplying the fast-growing supermarkets.

  4. Today

Thomas McKnight & Daughters supplies retail, wholesale and manufacturing customers in the UK and throughout Europe.

Rory and James McKnight on the farm

Raised slowly, within sight of the Shropshire Hills

Our brothers, Rory and James McKnight, farm Aberdeen Angus and Hereford cattle near Church Stretton, an area the Victorians called Little Switzerland. They started out competing to finish the best cattle for market. Now they work side by side.

Our system is a traditional one and it takes longer than most. Cattle are fed up to 70% grass and forage and are out for up to 300 days a year, coming under cover only when the weather turns.

Beyond our own farms, we select native and continental cattle from across the British Isles on breed, age, fat cover and conformation, fully traceable to the farm of origin.

Dry aged on the bone

21–28 days

Bone-in cuts are matured in a dry-age chamber where airflow, temperature and humidity are controlled, so the beef ages slower and longer for deeper flavour and tenderness.

Only carcasses that qualify by age, breed and classification go into the chamber. Need longer maturation? We age to your own specification.
